Ingredients
1/3 cup Egg Beaters 100% Egg Whites
1/2 cup whole wheat panko breadcrumbs
2 tsp Italian seasonings
1 small eggplant, cut crosswise into 8 (¼-inch-thick) slices
1/2 cup low sodium marinara pasta sauce
1/4 cup shredded Parmesan cheese
Directions

1. Preheat oven to 400°. Line rimmed baking pan with foil; spray with cooking spray.

 

2.In wide, shallow bowl, whisk egg whites. In separate wide, shallow bowl, stir breadcrumbs, Italian seasoning, and salt and pepper to taste. Dip eggplant in egg whites, then in breadcrumb mixture, pressing so mixture adheres; place on prepared pan. Spray eggplant with cooking spray; bake 20 minutes or until golden brown and crisp.

 

3. Spread marinara over eggplant; sprinkle with cheese. Bake 10 minutes or until cheese is melted and lightly browned.
